PARMESAN WALLEYE STRIPSOur walleye fillet, cut into strips, breaded in a light coating of parmesan bread crumbs, then fried to a golden brown. Served with a side of lemon caper aioli.

16 ounce thick-cut strip, hand cut-in house is slightly firmer than the ribeye and features a similar flavor profile.

These highly sought after steaks use a 40-day open air process to further the concentration of flavor through a carefully supervised dehydration cycle.
This can reduce the overall weight (mostly water weight ) up to 20%, but imbues greater tenderness and intensity of beef flavor. *Please be aware that the dry aged process alters both the flavor and appearance of a steak; a cut that has gone through the process may look darker or appear over the temperature requested.
